Upon opening, the goal of Questa Lasagna was simple: to provide the town of Mt. Morris, New York with high-quality Italian cuisine. Originally intended to serve upscale take-out, the restaurant quickly became much more. "No freezers, No fryers. Just fresh, authentic Italian cuisine." That was the tagline that described Questa Lasagna to a town not yet familiar with the restaurant. That tagline remains true to this day, but Tim Knowles and his staff have expanded upon the concept to include a focus on locally produced fruit, vegetables, and poultry.

In 2017, Questa Lasagna redefined itself as a restaurant dedicated to using the freshest possible local produce by combining the agricultural potential of Livingston county with its goal of serving high quality Italian cuisine. Working alongside local farmers and producers like Gobbler's Ridge, East Hill Creamery, Earth Dragon Gardens, and True North Farms, Questa Lasagna serves its comforting Italian fare while drawing attention to the region's agricultural bounty. There is so much to love about this region, and its culinary potential is but one aspect that Questa Lasagna is dedicated to exploring.

History
Questa Lasagna first opened when Culinary Institute of America trained chef Tim Knowles decided he wanted to be the captain of his own ship. Tim had been working in the corporate sector of the food and beverage industry since the early nineties, and in May, 2010, he changed that for good. As a result of Brooklyn developer Greg O'Connell's investments in the quiet town of Mt. Morris, Tim was able to acquire the venue at 55 Main Street and make his aspirations of owning a restaurant dedicated to serving honest, delicious food a reality. Four years later, Tim was able to purchase the space at 53 Main next to the original dining room, adding six more tables to the restaurant.
Like many businesses, the 2020 pandemic caused Questa Lasagna to shut it’s doors for a time. 2022 will see Questa Lasagna re-open its doors for anyone looking for a relaxed dining experience!
